What causes a motorcycle to "vapor-lock?"?

After running for a while my sportster begins the whole coughing out the carb routine, and requires a decent amount of throttle to not stall at idle. Then when I shut it off, i can hear a suction sound immediately after turning the bike off. What's happening? How do I fix it?
